Rooted in a profound appreciation for Irish Mythology, Ninth Wave Irish Gin draws inspiration from the deep connection between the sea and Ireland’s rich history.
Legends tell of a mystical place beyond the Coast of Ireland, far out across the sea. This place is said to be the home of the Irish Sea God ‘Mac Lir’. These mystical islands are known as the ‘Otherworld’ and are invisible to the naked eye.
In Irish Mythology, it is said that every person possesses their own version of the 'Otherworld' -a unique sanctuary where they feel complete tranquillity and unbounded joy. Ninth Wave Irish Gin is an ode to personal paradise and a personification of what our individual ninth wave looks like.

THE PROCESS
OUR BOTANICALS
We use 9 botanicals to create our Ninth Wave Irish Gin. The core botanicals being Juniper, Coriander and Angelica root. Cardamon, Cassia Bark and Grains of Paradise add subtle warmth and spice. Lemon peel gives a sharp citrus; which compliments the citrus notes from the coriander. Lemon Verbena provides a rounded fresh grassy/ floral note and Orris root helps balance all the botanicals together.

THE PROCESS
MACERATION
We use a 1000L dedicated Pot still with a detached vapour basket for the Ninth Wave Gin. We charge the still with 900L of 45% ABV Neutral Grain spirit and macerate 8 of 9 botanicals directly in the pot for 12 hours to help release their essential oils, pre distillation. The lemon verbena is placed in the vapour basket- this allows the vapour to pass through the vapour basket which will lift a delicate profile from the lemon verbena. We use a vapour basket to ensure only the desirable flavours carry across into our spirit from the fine cut verbena.

THE PROCESS
DISTILLATION
After 12 hours of maceration, the still is brought up to a rolling boil, the hearts cut is determined by nosing the spirit to ensure only the highest quality spirit makes the cut. The heads and tails of the spirit is collected and recycled. Although this spirit didn’t make the cut for the distillation, does not mean it is poor quality, it can be reused in future distillations.

BOTTLED & SHIPPED
We reduce our spirit to bottling strength (43%) with Reverse osmosis filtered water from an RO plant on site, and gin is transferred to the bottling line ahead of filling.
